  • ¼ cup pickled jalapeños plus 1 tablespoon of brine/juice
  • cup sour cream
  • 1 clove garlic or ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon ground cumin

  • 1 tablespoon avocado oil or olive oil
  • 2 tablespoons fresh lime juice
  • ¼ cup fresh coriander leaves optional

Instructions

CONVENTIONAL METHOD

  • Add pickled jalapeños, brine, sour cream, garlic, onion powder, cumin, salt, oil, lime juice and coriander leaves, to a blender or food processor. Blend until completely smooth and creamy.
  • Add more salt or a splash of pickle juice for extra tang if needed. Chill for at least 1 hour before serving.

THERMOMIX METHOD

  • Add pickled jalapeños, brine, sour cream, garlic, onion powder, cumin, salt, oil, lime juice and coriander leaves, if using to mixer; mix 10 sec/speed 6. Scrape down the lid and sides of the bowl; repeat mixing 20 sec/speed 6.
  • Add more salt or a splash of pickle juice for extra tang if needed. Chill for at least 1 hour before serving.

Notes

Storage: Keep in an airtight container in the fridge for up to 5 days. Stir before using if separation occurs.
Spice Level: Adjust heat by using more or fewer pickled jalapeños or adding a dash of hot sauce.
