Our keto Chocolate Berry Marshmallow Bites are bloody brilliant!

You are all going to love that these are really easy to make. They do not take long to prepare, and you can, in fact, be eating them within the hour, even including freezer time!

The Ingredients

Chocolate Layer –  I use the 85% Lindt however choose what you love. Vitawerx Milk Chocolate or White Chocolate would be awesome, or even the sugar-free Well Naturally Chocolate is amazing chocolate.  I mix the chocolate with a little Coconut Ghee. I do get my coconut ghee from EHS but if you cannot find it locally you can substitute coconut oil.

Gelatin – I use Great Lakes Gelatin or Locako. To save 15% on all products with Locako use the coupon code MEGAN15 at checkout.

Our testers have tested them with McCormicks, your standard supermarket issue. It still works in our keto marshmallows, but you may get a little separation in the mallow mixture. This does not affect the flavour in any way but may just look a little clear in some areas. Otherwise Great Lakes does not separate in the recipe at all.

Natvia Raspberry Jam – I found this sugar-free jam at Woolworths and grabbed a bottle to try out. It took me a while to get around to trying it, but holy moly it is bloody delicious! Of course you can make your own sugar-free jam or use other brands but this one is pretty damn good.

Chocolate Berry Marshmallow Bites Tips

The marshmallow bites are super easy to make.

Melt the chocolate with the ghee. Spoon into a 24 hole silicone mould. Freeze.

Heat water, gelatin and jam. Spoon on top of chocolate. Freeze.

Prepare Keto Marshmallow and spoon onto the jam. Freeze until set.

Ingredients 

  • 80 g (2.82 oz) dark choc 85% cacao, roughly chopped
  • 30 g (1.06 oz) coconut ghee or virgin coconut oil or coconut butter

JAM LAYER

  • 25 g (0.89 cups) gelatin click for Aussie supplier and check Note 4 below
  • 60 g (2.12 oz) water
  • 140 g (4.94 oz) Natvia Raspberry & Chia Jam

MARSHMALLOW LAYER

Instructions

CONVENTIONAL METHOD

  • Melt chocolate and coconut ghee and mix until combined.
  • Spoon 3/4 tbsp of chocolate into a 24 mould silicone cup tray (or lines slice tray). Transfer to freezer while preparing Jam layer.
  • Heat water, gelatin and jam in microwave for 30 seconds or until gelatin is dissolved.
  • Spoon 3/4 tbsp on top of chocolate layer and return silicone tray back to the freezer while preparing marshmallow layer.
  • Prepare Keto Paleo Marshmallow as per the instructions and spoon onto jam layer. Return to the freezer for 30 minutes or until you can easily remove each bit from the silicone mould. Store in the fridge in an airtight container.

THERMOMIX® METHOD

  • Mill chocolate 5 seconds/speed Add coconut ghee and melt 4 minutes/50°C/speed 2.
  • Spoon 3/4 tbsp of chocolate into a 24 mould silicone cup tray (or lines slice tray). Transfer to freezer while preparing Jam layer.
  • Heat water, gelatin and jam in microwave for 30 seconds or until gelatin is dissolved.
  • Spoon 3/4 tbsp on top of chocolate layer and return silicone tray back to the freezer while preparing marshmallow layer.
  • Prepare Keto Paleo Marshmallow as per the instructions and spoon onto jam layer. Return to the freezer for 30 minutes or until you can easily remove each bit from the silicone mould. Store in the fridge in an airtight container.

Notes

  1. Chocolate Berry Marshmallow Bites can be stored in an airtight container for up to 1 week.
  2. This recipe is also suitable for freezing in an airtight container for up to 1 month.
  3. Keto milk or white chocolate can be substituted for dark chocolate.

    Oh my goodness. I think I died and went to heaven when I ate one of these little flavour bombs.
    Three of my favourite flavours in one exciting little treat and so easy to make. My granddaughter absolutely loved them and asked for some to take in her school lunch box.
    These will impress everyone, even the non keto family members went back for a second marshmallow bite.
