Keto Chicken Enchiladas really aren’t that hard to come up with a recipe that would be a) keto and b)tasty. This recipe though really does deliver.. hence the title Best Ever Keto Enchiladas lol.
This recipe is a regular in our household. We have actually been doing this one for over 20 years, just a little change in the thickener over the past couple of years. It is easy and such a versatile recipe.
How to make the Best Ever Keto Enchilada
- Make the Best Ever Enchilada Sauce. This sauce makes the dish and dont skimp on those guajillo chillies. They are totally worth ordering online or purchasing from the local specialty food store. They add a rich earthy smokiness to Mexican food with a somewhat mild heat.
- I have included a choice of either breast or thighs. I totally recommend the breast for the Thermomix recipe as I find thighs just weird when they are cooked in the Thermomix as I believe they should be browned in a pan.
- Xanthan gun can be substituted for gelatin as a thickener should you not have any
- Use delicious fresh tomatoes if you have them otherwise the tinned variety is good. I use Rick and Thick Ardmona in mine when using canned tomatoes.
- You will also find my recipe for the Soft Tacos on the website which again is another completely simple recipe that you can make quickly or in advance at any time. They are also suitable to freeze.

Best Ever Keto Chicken Enchiladas
Ingredients
- 1 tablespoon olive oil
- 1/2 onion thinly sliced
- 1 clove garlic finely chopped
- 6 chicken thigh fillets diced (or sub. chicken breast)
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 batch Best Ever Keto Enchilada Sauce
Optional hot fresh chilli, finely sliced
- 1 batch Mexican Easy Guacamole
- 1 batch Simple Keto Soft Tacos
- fresh coriander leaves
Instructions
CONVENTIONAL METHOD
- Preheat oven to 200℃.
- Heat oil in oven proof pan over medium heat. Add onion and garlic and sauté until translucent.
- Add chicken thighs, cumin and coriander. Cook until lightly golden.
- Pour over Enchilada Sauce cover with lid and transfer to oven. Cook for 15 - 20 minutes.
- Serve with Guacamole, Soft Tacos and fresh coriander and chillies if using.
THERMOMIX® METHOD
- Preheat oven to 200℃.
- Chop onion and garlic (and chilli if using) for 2 seconds/speed 6.
- Add oil and sauté for 3 minutes/100℃/speed 1.
- Add chicken (I recommend using bread for Thermomix) cumin and coriander.
- Cook for 5 minutes/100℃/reverse/stir.
- Add Enchilada Sauce and cook 10 minutes/100℃/reverse/stir
- Serve with Guacamole, Soft Tacos and fresh coriander and chillies if using.
