Bacon Chops Guacamole and Poached Eggs – Keto breakfast
This Keto breakfast of bacon chops, guacamole and poached eggs is seriously the breakfast of champions!
Do you know how hard it is when you make in an insane keto breakfast and then you have to photograph it? I was dying to dig into this plate of goodness yesterday so much so that I nearly forgot the poached egg “money shot”. I mean what kind of food photographer would I be if I hadn’t clicked off a few rounds with the Mark IV with the yolk all oozey?
I found these bacon chops in my local Aldi. I thought they would be pretty tasty, but let me tell you… tasty is too small a word! If you love bacon you are going to love these babies! So bloody delicious! Today I went back and bought 3 more packets. I have no idea why I felt the need to buy so many but I did. Maybe it is the fact that I don’t do all my shopping at Aldi? And, for those of you wondering it doesn’t look like these are just a sale item hey look as though they are part of their main lines.
Of course talking keto breakfast we are talking “break the fast”. Breakfast can be at any time of the day. My break fast of these bad boys was at 12:30 yesterday after an 18 hour fast. The combination of the guacamole and fresh eggs was just perfect. I have to say thank you to a Thornton neighbour and fellow keto follower Lynda Watters and her “especially delicious” teeny tiny fresh eggs. These eggs are so cute and so tasty, but also so tiny.

I hope you love the recipe as much as I do. The only carbs that are in this recipe come from the avocado, herbs and lime, so I would say those carbs are fine by me.

Bacon Chops Guacamole and Poached Eggs
- 2 50g bacon chops 1 got these in Aldi, but you can get a butcher to cut thick bacon
- 20 g butter
- 2 eggs use the freshest un-pasteurised eggs
- 30 g white vinegar
- 1/2 avocado
- 20 g lime juice
- 1 tbsp fresh parsley or cilantro chopped
- 1 tsp jalapeno fresh and chopped
- salt and pepper to taste
- chilli flakes
- In a small frypan heat butter over medium heat and cook bacon until golden
- While bacon is cooking poach eggs in a small saucepan of simmering water with vinegar for 2 minutes for a soft poached egg
- In a small bowl mash avocado with lime juice, fresh herbs, jalapeño and salt and pepper
- Serve with salt and pepper to taste and chilli flakes
