The Ingredients

  • Pork Belly – Skin off, chopped into bite-sized pieces. Swap: Pork shoulder or boneless pork ribs will work too—just won’t be quite as juicy or fatty-crisp.
  • Southwest Seasoning – You can link your own blend here, but if not, any smoky spice mix will do. Swap: Taco seasoning, Cajun spice, BBQ rub, or even just salt, pepper, paprika, and garlic powder in a pinch.

Notes

  • Dry the pork first – Patting the pork dry nuggets before seasoning makes a massive difference to the crisp factor.
  • No oil needed – Pork belly has enough fat to crisp itself. Save the olive oil for another day.
  • Keep an eye near the end – Once it starts to brown, it can go from perfect to burnt real quick.
  • Other pork belly air fryer recipes suggest cooking in a single layer. I found this recipe worked perfectly with it all piled into my air fryer basket.

Frequently Asked Questions

Yes, but defrost it fully first. Frozen pork releases water as it cooks, which can stop it from crisping properly. Let it come to room temp before cooking for best results. Pat it well dry before seasoning.

It could be too much moisture, too much turning, or wrong temperature. If it is still cooking, keep it going and turn up the temp. If it doesn’t get crispy, make sure to pat the pork dry before seasoning next time you make it.

Preheat the oven to 220°C (430°F). Spread pork in a single layer on a wire rack over a baking tray. Bake for 35–45 minutes, turning halfway

Ingredients

  • 1 ½ kg (3 lb) pork belly chopped into bite-sized pieces
  • 1-2 tbsp Southwest Seasoning or your favourite seasoning

Instructions

  • Toss the pork belly pieces with the Southwest Seasoning until everything is well coated. Use as much or as little as you like, depending on how bold you want it. I usually go for the full 2 tablespoons because flavour is life.
  • Pile all the pork straight into the air fryer basket—no lining, no fuss. I leave it unlined so the fat can drain away as it cooks (plus it helps get those crispy edges).
  • Air fry at 200°C/400°F for 25–30 minutes. About halfway through, give the basket a good shake or turn the pieces with tongs. No need to be precious—just move them around a bit so they crisp up evenly.
  • Cook until the pork is deep golden and crispy in all the right spots. You’ll know it’s done when it smells irresistible and looks like you want to dive straight in.
  • Serve hot, with whatever dipping sauce you fancy—ranch, aioli, hot sauce, or nothing at all. They’re pretty perfect as-is.

Notes

Storage Tips
Store cooked pork bites in an airtight container in the fridge for up to 4 days. Reheat in the air fryer for 5–6 mins at 180°C.
Helpful Ingredients Tips
Use pork belly for that perfect fat-to-meat ratio. If subbing with leaner cuts, add a little oil to help it crisp.
Substitutions
Sub the seasoning with your fave spice mix—taco, Cajun, BBQ rub all work well. Pork shoulder or boneless pork ribs can work too, just adjust cooking time.
Alternative Cooking Tips
Bake at 220°C/425°F for 35–45 minutes on a wire rack, turning halfway. Grill at the end to crisp.
Chef’s Tips
  • Dry the pork before seasoning for max crisp
  • Don’t line the basket—let that fat drain
  • Don’t rush it—let it go golden, not just cooked
