My buttery beef casserole is surprising delicious considering it was created originally with no testing at all done.
I had a simple request to convert a recipe from a Coles (supermarket) magazine from one of 365 members.
While the recipe in question wasn’t keto, it also wasn’t quite like this one but it inspired me to put a few simple ingredients together to create this delicious mid week meal. <>

If you are wondering what the difference is between a Chicken Milanese and a Chicken Schnitzel, the answer is…. parmesan. A chicken schnitzel recipe is traditionally done just with breadcrumbs. In this chicken Milanese recipe I have not only used parmesan but also used one of my all-time favourite ingredients golden flax seeds/meal. A popular mid week meal made keto.

Keto Minestrone Soup
This Keto Minestrone Soup was originally created for one of my cookbooks, but because I believe this is one of the most perfect recipes I have decided to release it for free.
When first sent out to the testers I knew I was completely onto a winner when everyone kept testing over and over again. Sadly I was kind of hooked onto it as well. While the soup does have a bit of carrot and tomatoes in it (raising the carbs a little) I ate this soup part of a regular meal plan and lost weight every single week at a good rate.
